How could I replicate the "chopped steak" from Luby's Cafeteria?!

Question:

How could I replicate the "chopped steak" from Luby's Cafeteria?

I think luby's might be the only place that has a steak called chopped steak. cause i haven't heard it any where else. I really like the taste and it is very soft. you can cut it with a fork. (not like a roast or chicken) its like meat loaf or salisbury steak. If I was to try and prepare the same thing at home what would I buy at the store and how would I cook it? Is it really just MeatL or SailsburyS? or what is it? Luby's are mostly in texas.
