What is pulled beef?

why call it pulled beef'' whatever it is I had it fer dinner, shore wuz good with mashed taters & brown gravy. whatever it is' hope I don't git sic from eating a big deal of it'

"pulled beef" is when you take a roast or some other similar cut of beef and slowly cook it until it is extremely tender. Then, rather than carving it or cutting it into chunks, one takes one or two forks or other utensils and seperates the meat into the tiny strands that make up a piece of meat. The act of separating the meat into those tiny strands is referred to as pulling it apart - making the beef (or pork or chicken... whatever kind of meat is being done" pulled.
Some people will also call this shredding, though, in my experience, shredded meat was typically cut into fine pieces with a knife, whereas pulled meats are not cut. They fall apart into the natural strands.
