Have you tried champ - it's an Irish potato dish which uses mashed potatoes, cream, spring onions and salt/pepper.
Gently fry off finely chopped spring onions (scallions) in butter - don't over do it - and then warm the cream in the pan with the onions. Add the cream and onions to the mash and blend in gently, seasoning to taste.
