It's any white potato grown in Ireland. It has nothing to do with the method of cooking. And there's no letter "e" when you're talking about the individual tuber. The variety that resulted in the disastrous potato famine was known as the "lumper". It had a very high water content and was particularly vulnerable to the blight.
