Question:

I'm on a strict oil-free, vegetables and fruit diet for a while... any recommendations?

I have been making tom yum, Sri Lankan styled dahls and curries and simple steamed vegetables and bananas...

Do you have any special recipes to go along with anything fruit and vegetables?

I don't use cooking oils (or any kind of fats), animal products (milk and cheese are okay)... and I don't use eggs.

Looking forward to some really good stuff, which I am sure that most of you have to share with me...

Answers:

Best damn guacamole there is. . .

2 ripe avacadoes mashed but still chunky
One roma tomato diced
1/2 small onion diced
1 med clove garlic minced
3 or 4 leafy ends of fresh cilantro minced (and diced and Sliced as fine as you can possibly get it!!)
Splash of lemon or lime juice
Pinch of garlic powder or granulated garlic
Tablespoon of sour cream (light, fat free, or regular, doesn't matter)

Mix all prepared ingredients together.

You can also add a small jalepeno pepper diced (remove seeds) for a bit of heat if you want it!! But it's excellent even without it!!

Use in veggie wraps or with fresh veggies or well, even by itself, it's chock full of the "good" fats and other good stuff!! Antioxidants 'n' stuff, you know what I'm talking about!! ; )
