Why do some foods begin to get water that settles on top of it?

why do some foods like mashed potatoes, tuna, egg salad once they sit over night begin to get water that settles on top of it? how can i prevent this from happening?


Answers:

That's condensation. The higher water content the food has, the more condensation it will get in the refrigerator. If you cool hot food briefly, not more than one hour, before refrigeration, it should cut down the condensation. But nothing will prevent it entirely.
