(Quantities are up to you-to your taste) Chop up some tomatoes (squeeze out the seeds first). Mix in finely chopped onions or scallions, salt, pepper, I like to add julienned fresh basil and italian parsely stir in a bit of grated parmesan cheese and a swirl of olive oil. I like to serve it on italian bread that I've crisped in the oven. A splash of balsamic vinegar on top after you spoon it on the bread it good too.
