My son is turning 11 next week and he wants cupcakes for school?

Does anyone have any ideas on the type of cupcakes for him. Recepies please. Also what type and how much food coloring should I use on frosting to make it really bright?


Answers:

First, I would check with the school to make sure it's okay to bring cupcakes--many schools now have a 'no junk food on birthdays' rule.

Kids aren't picky about the cake; go with yellow, white or devil's food (leave that up to your son). It's all about the frosting, so go a little crazy; I like to buy the whipped frosting and pipe it onto the cakes with a large star tip in a double swirl so it looks like soft-serve ice cream and spray it with those spray-on food colors in streaks (red and blue make a purple/black color).

If you're making the frosting or tinting store-bought, go with white. Buy Wilton gel colors (these are the most intense)--you can get these at Michael's--and tint the frosting a little at a time until you reach the desired shade. A warning, though: intense colors will also color your lips, your tongue, your teeth, and what comes out later. Learned that after making my son a bright blue cake with electric orange frosting.
