Hummus, do you have a great recipe?

I have some wonderful pita chips from Trader Joes and I want to dip them in hummus! Would this be a good idea? Can I dip veggies as well? Have a little hummus party? Would that be fun? Do you have a hummus recipe that is worthy of a party of it's own?


Answers:

All those things sound wonderful with hummus. Most hummus recipes I've found have a sesame paste called tahini in them. Where I live, tahini can be difficult to find and extremely expensive when you do find it. I use Alton Brown's recipe that substitutes peanut butter for tahini and I think it tastes great.

Turbo Hummus

2 to 3 cloves garlic
1 can garbanzo beans (chickpeas), drained and liquid reserved
2 to 3 tablespoons smooth peanut butter
A handful fresh parsley leaves
1 lemon, zested and juiced
Pinch freshly ground black pepper
Pinch kosher salt
1/3 cup extra-virgin olive oil

Chop the garlic finely in a food processor. Add the beans and 1/2 of the reserved liquid and process finely or to desired consistency. Add the peanut butter, parsley, lemon zest and juice, black pepper, and salt. Process until it forms a paste. Drizzle in the olive oil and process until it reaches the consistency of mayonnaise.
