Beer, Cheese & Potato Soup, this Rocks !

Get some canned chicken stock, or make some by boiling chicken & season to taste. Start heating it over low-medium heat.

Grate 2 cups of cheddar cheese, the sharper the better because it has more flavor & the shreds stay seperate better.

Add 2 tablespoons of baking flour to the grated cheese and mix with your hands till the shreds are coated with flour. This helps keep it from clumping & thickens the soup.

Chop 2 potatoes up into little bitty cubes, and sautee them in a skillet till they just start to get tender. Do the same to a white onion, and 3-4 stalks of celery. Sautee till the potatoes are almost done.

Heat the chicken stock to a good simmer, but not a boil, add the veggies. Simmer for about 20 minutes, then start adding the floured cheese a little at a time, while stirring. Keep stirring till all cheese is added & soup is thick like chowder.

This is awesome in a bread bowl. Hollow out a couple of little sourdough loaves & serve with the chunks of bread you took out for dunking, Yummy !
