How do I make bread like buns?!


Question:

How do I make bread like buns?

I want to bake, from scratch, buns that, when pulled apart, are like warm, slightly chewy, fresh bread, but in a roll (bun, biscuit) form.

RICH DINNER ROLLS
1 cup milk
1/4 c. sugar
1 tsp. salt
1/4 c. butter
1/2 c. warm (110 degrees) water
2 pkgs. dry yeast
2 eggs, beaten
About 5 c. unsifted bread flour (If you don't have bread flour all purpose flour will work)
Just don't use electric mixer.( Mix by hand,)
Scald milk; stir in sugar, salt and butter. Cool to lukewarm. Measure warm water into large mixing bowl. Sprinkle in yeast, stirring to dissolve let sit for 5 min. Then add lukewarm milk mixture, eggs and 2 cups of flour. Beat with electric mixer until smooth. Continue stirring in flour with wooden spoon until you have a soft dough.
Turn out on lightly floured board and knead until smooth and elastic, about 8 to 10 minutes. Place in greased bowl, cover with a damp towel and let rise in a warm draft free place until double. Punch down and shape into rolls. Just a tad smaller than a golf ball about 11/2 inch in diameter place on greased sheet pan about 1 inch apart Let rise until double again they will be touching at this point Bake at 400*F degrees about 20 to 25 minutes or untill dark golden brown and brush with butter.
Dov-- this the one I use it reminds me of the rolls I made while in the bakery buisness
