How do I make potato chips at home that are actually delicious?!


Question:

How do I make potato chips at home that are actually delicious?

I don't have a deep fryer, but I can use a deep pan. What are the steps to make them, and what kind of oil should I use?

-I have potatoes, very fine course salt (it's almost like a powder) and all sorts of oils. I just want a good, crispy, deliecious chip. I'm kind of having a craving now, ya know?

One last thing-how do I make them so that they're like the kettle cooked kind, or is that how they'll turn out anyway?

Should I use Corn oil? Canola? Vegetable?


Answers:

you need a mandolin to slice the potatoes. its like a little counter top version of a deli slicer -- just big enough for a potato -- you can get them in most latin groceries. oh and a pot of really hot oil. the thinner you can slice it and the faster it browns the crispier it will be. if you notice kettle chips in a bag are browner than standard chips.
