Meal to impress new in-laws?!

Meal to impress new in-laws?

What can I make (include recipe please) to impress my in-laws whom I have never cooked for> I am a pretty good cook, looking for ideas. What have you used and been succesful with? Main course, sides and desert.


Answers:

Salad with mixed greens:
thin sliced red onion, thin peeled zucchini slices, quartered cherry tomatoes, sprinkled with shredded (not grated) Reggiano Parmigiana and Pignoli that has been lightly roasted
Mashed Potato w/ roasted garlic (none of the box stuff)

MAIN ENTREE:
Mushroom Stuffed Boneless Breast of Chicken wrapped in bacon.
TO MAKE STUFFING:
GET: 1 - 2 portabella, several shitake, and a few regular button mushroom.
Thin slice the Portabella's, lightly salt & pepper - on low heat melt a tablespoon of butter and a tablespoon of nice real green olive oil - when real hot (one slice at a time) quickly fry both sides and place on paper towel
* Remaining oil & butter in pan - mix in chopped together shitake & button mushrooms with about 1/4 cup of fine chopped celery and 1/4 cup fine grated carrot and 1/4 cup finely chopped red onion and 1/4 cup chopped zucchini
* When everything is nicely sautéed add 2 cup of Italian bread crumb and mix everything together well.
CHICKEN:
Swanson Boneless/Skinless Chicken Breast
~ one as a base
~ one slice of mushroom on breast
~ a nice scoop of mushroom/breading on mushroom slice
~ next add one mushroom slice on top
~ put second chicken breast on top
~ Spiral wrap one slice of bacon around the breasts (use toothpick to keep bacon in place - before serving toss the tooth picks).

DESSERT:
get several types of fresh berry
take 2 or 3 of each berry mash it real good and mix into Mascarpone (if you don't know Mascarpone - you are in for an awesome treat! It carries flavor like like a violin carries a note)
Use the mascarpone with the berry as the cream over the whole berries.
