Restaraunt Style Spanish Rice?

I would love to find a good recipe for spanish rice..you know the kind that is at all of the mexican restaraunts.


Answers:

It is pretty easy and can be made either orange or white.
Use a good size skillet or large paella pan with lid.
Ingredients:
2 cups basmati rice
2-3 Tbls corn oil
4 cups hot water
4-5 Tblsp of Chicken Bouillon (I use the Knorr Caldo de pollo)
More or less to taste
4-5 cloves of garlic minced (more or less to taste.)
1 can tomato paste (orange rice) omit for white rice
Cilantro sprigs a handful - 10 or so.
1 Jalapeno pepper
Frozen peas / corn / carrots (if desired)

Mix water, bouillon, garlic, tomato paste together in extra large pourable cup (I use a 4 cup measuring Pyrex)
Place oil into pan and pour rice in. Cook rice until it starts to brown a little stirring occasionally. When rice is a nice toasted color, move pan directly under exhaust fan of stove and add contents of cup (water etc) It will steam up, so be careful.
stir together then stir in vegetables if desired, you don't need alot of them, mostly used for color. Throw in whole jalapeno and cilantro sprigs and cover. It usually takes about 20 Min's on med-low heat. I do check it occasionally and make sure rice is not sticking to bottom of pan. If rice sticks, turn down heat and add a little more water.move the rice around a little. The key is to not stir it to much once it starts cooking or it gets really mooshie if over stirred. Hope you like it. We serve it and black beans with all of our Mexican meals.
