What can I use in receipes instead of PERNOD? thanks?


Answers:

Being a former chef and having used Pernod many times and it is my favorite liquer, anise seed or fennel seeds give you the same thing, steep them in some white wine, I would warm it in a pot or the microwave, and put a teaspoon in and let them set until cooled.

If you not into the licorice flavour, lemon peel or other citrus peel, bay leafs or fresh herbs are fine, tarragon is a similar flavour to the licorice taste, french tarragon when fresh is the closest in flavour, and it a nice colour contrast too.
