SWEET PEPPER RELISH
Serving Size : 10

12 ea Sweet Green Peppers *
12 ea Sweet Red Peppers *
12 ea Med. Onions, Peeled
4 c Cider Vinegar
2 c Sugar
2 tb Pickling Salt

Peppers should be seeded.
Cut peppers into strip and quarter
the onions.
Put vegetables through the coarse blade
of a food grinder or chop in a food processor.
Put vegetables into a heavy kettle and pour boiling water
over them to cover.
Let stand 10 minutes, then drain.
Add the vinegar, sugar and salt to the vegetables.
Mix well.
Bring to a boil and simmer for 20 minutes.
Pour into clean jars while hot and seal.
Makes 10 Pints.

Red Pepper Relish
Serving Size : 1

15 sweet red peppers -- halved, seeded
4 medium onions -- halved
3 cups sugar
3 cups vinegar
2 TBS pickling salt

Thinly slice peppers and onions; set aside. In a 6 quart kettle combine
sugar, vinegar and salt; bring to boil. Add vegetables adn bring to
boil again; simmer for 15 mintues. Pour into hot sterilized jars,
leaving 1/2 inch headspace. Wipe rims with a damp cloth and adjust
lids. Process in a boiling water bath for 15 minutes. Makes 7 1/2
pints.

NOTES : This is a very colorful relish and is great for using as a
decorative addition to winter recipes. Also good as a relish with meats
and poultry dishes, or served on crackers spread with cream cheese.
