My mother is deceased and so I can't ask her but she used to make a fruit salad. It had orange jello, mandarin oranges, cottage cheese, walnuts crushed, and something else but I am not sure what or how much of each. I would appreciate help with this too. One other thing that my mom use to make had pistachio pudding mix, cool whip and I am not sure what but they were both excellent.

1 (15 oz.) can crushed pineapple
1 (15 oz.) can chunk pineapple
1 sm. pkg. pistachio instant pudding
2 c. miniature marshmallows
1 (9 oz.) pkg. Cool Whip
1 sm. can mandarin oranges (optional)

Pour both undrained cans of pineapple into bowl. Sprinkle pudding mix over and gently fold in. Add marshmallows and drained oranges. Add most of container of Cool Whip to get desired consistency. Chill.

COTTAGE CHEESE FRUIT SALAD

2 (16 oz.) cans crushed pineapple
2 (3 oz.) pkg. peach Jello
1 lg. and 1 sm. small curd cottage cheese
1 lg. or 2 (9 oz.) Cool Whip

Drain pineapple. Put Jello powder form into drained pineapple. Stir together to blend. Let set 15-20 minutes at room temperature. Add cottage cheese and Cool Whip. Refrigerate. u can try strawberries dipped with chocolates..
or baked pineapples and sprinkle with brown sugar for crunchiness..
or u can also make a variety of fruit kebab...

Poached Pears with Raspberry Sauce!

ngredients
9 Small ripe fresh pears
Fresh lemon juice
2 cups Pear nectar
1/2 cup Semi-sweet chocolate chips
Raspberry Sauce:
2 ( one ounce) packages Unsweetened frozen raspberries, thawed

Preparation
Peel pears under cold, running water with a vegetable peeler, leaving them whole with stems intact. Brush with lemon juice to prevent discoloration. In a large saucepan, combine the pear nectar and pears. Cook over low heat for 20 to 25 minutes, testing frequently to see if pears are cooked. When cooked, but still firm to the touch, carefully remove the pears from the juice and chill, reserving the cooking liquid. When ready to serve, rapidly boil the cooking liquid until reduced to about 1/2 cup. Add the chocolate chips and stir until the chocolate melts and the sauce is smooth. To serve, spoon about 1 tablespoon of the chocolate sauce and 1 tablespoon of the raspberry sauce onto each plate. Place the pear, standing up on the bed of sauce.





For Raspberry Sauce:


In a food processor or blender, puree the berries. Strain through a fine sieve, pressing with the back of a spoon to remove as much liquid as possible. Makes 1 1/2 cups This recipe is AMAZING and has been in my family for 50 years. Not only that? ITS SUPER EASY!

3 cups of FRESH sliced strawberries, raspberries, or blueberries, you could even used fresh diced peaches.

1 large container of cottage cheese

4 cups of steamed white rice

2 cups of sugar

fresh ground nutmeg

sprigs of spearmint for garnish


In your food processor, blend the fruit of your choice (fresh ONLY!), the cottage cheese, the sugar, and the steamed rice.
Blend until the consistency is ALMOST equivalent to pudding. You want the little chunks! Spoon each portion into whatever bowls or glasses you are using. Sprinkle with nutmeg, and add the spearmint. Cover each portion of this dessert with saran wrap until its time for dessert to be served! Reccomended to chill for at least 2 hours. In our family, it is quite normal for us to eat this for breakfast! If you delete the sugar, it is healthier. peach strawberry Easy, no cooking. Try pineapple, red &green grapes, banannas, kiwi,cantalope & strawberries. Just mix them all together in a big bowl, add a little fresh fruit preserver and you are done. method
wash out blender before use. then cut up bananas, papayas, pineapple.in seprate container, blend together banana, papaya, pineapple and mango juice.add crushed ice to blender. hen blend.

serve in juice glass, garnish with cherry and lemond wedge. serve 8/9 person, serve chilled this does not have the ingredients you named but I thought I would share my favorite with you

Creamy Coconut and Key Lime Fruit Explosion


Ingredients
2 (3.4 oz.) pkgs. coconut cream instant pudding
4 cups milk
Key Lime Cheese Ball Mix
12 oz. thawed Cool Whip?
3 cups halved fresh strawberries
2 cups diced kiwi
3 sliced medium bananas

Directions
Prepare pudding mix as directed on package with milk; refrigerate. After set, fold in Packet 1 of Key Lime Cheese Ball Mix and Cool Whip. Blend in fruit; refrigerate 30 minutes. Garnish with Packet 2 of cheese ball mix before serving. Makes 8-10 servings.

INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

DIRECTIONS
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.

I would probably cut the sugar in the fruit salad in half or use none at all...its really sweet with or without.
