Answers: I believe Granny Smiths are supposed to be the best. I use granny smith, but if they are not good grannys the pie won't be good. they have to be firm and juicy. my favorite eating apple is jonagolds, and i have heard they are good for pie, and if you find good jonagolds, I would say try that because they seem like they would be great in a pie :D. I think maybe galas are too sugary or not the right texture for pie When I bake my fresh apple pies I ALWAYS use Granny Smith's Apples. Never used anything else. They stay the shape they are supposed to and never get super mushy. They are much more firm and and don't go sloppy when cooked. Also because they have a slightly bitter taste, it gives pies that zest! Granny Smith's are the best apples for making pies. There's also a combination of two apples together that's supposed to be good. Maybe someone will know that combo. One is a Johnathon apple, but I forget the other. Good luck to you.
