What's the deal with reheating rice?

I 've been told you can't eat cold rice, and it should be reheated to really hot, else there's some bug you can get. where does that leave you with cold rice on a salad?


Answers: Botulism. Very, very dangerous. My mother nearly died from it. Once rice is cold you should put it in the fridge immediately. You can eat it cold as a rice salad, but if you reheat it it must be piping hot to kill off any nasty bacterium which are lurking! I've heard that reheating rice can cause food poisoning. Is this true?
It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once. NO! Put the rice down, stand back from the rice! for 'tis the other way around.

Never reheat rice or keep it warm, it is a hotbed of manky bugs.

If you're cooking the rice to eat cold then let it cool down as quickly as possible and then refrigerate. this is good. this is safe.

Enjoy! never heard of that. as long as the cooked rice is refrigerated soon after cooking it is fine to eat it cold. as with any cooked food, leftovers need to be put in the fridge within 30- 60 minutes (sooner if it's really hot weather or with certain kinds of foods). You can cook rice and have it hot or let it cool and make a rice salad.

However, reheating rice that has been cooked once is not meant to be good as it produces toxins(so my mum's goodhousekeeping mag says).

I have refrigerated cooked rice and then reheated it through and i'm still here!- but would not do too often. Don't keep cooked rich for more than a day, and make sure it is well heated, there is a thing about a certain bug, but you can let the rice get really cold and freeze it. but the best idea, is to just make enough, for one meal, for each person.. it is best cooked fresh.... I have worked out just enough for us two and none left over... 60 grams or 2 1/2 ozs is enough for two.. I eat cold rice all the time! You have to be careful with rice.

When people get an upset stomach or mild food poisoning after having an Indian or a Chinese they invariably blame it on the meat or fish; most of the time it is the rice!
