I think you have it right there: saute the onion and peppers in a little bit of olive oil and garlic. Steam the broccoli until crisp-tender. Serve with a nice crusty bread and perhaps grated cheese. rub your pan with a clove of garlic, chop up the onion, peppers, and broc, and stir fry until just tender in the olive oil...ther ya go saute your onions, pepper and garlic along w/ some sea salt in olive oil, then add broccoli and (corn) if you have it.
Makes a great side dish too or place it in a veggie wrap with a little touch of your favorite dressing. Well in terms of making a veggie sandwich that is easy. Fire up a saute pan starting at high heat, go around the pan once with the olive oil, and lower the pan to medium. Chop the garlic into small but not miced chunks (so as no to lose the flavor) chop up some onion whichever way you would prefer to eat it, slice the peppers into strips, and put the heads of broccoli in a sauce pan with water and slices of garlic. Only enough water to cover the bottom of the pan, cover and let steam for about 5-10 min until right bright green. Quickly add the broccoli to the saute pan with the other veggies, toss around so the flavor mixes and toss into a pita, salt and pepper to taste. I would also suggest adding some cheese, preferably parm (it goes well with broccolli) and maybe some red pepper flakes for spice.
You could also make a red sauce for pasta by doing the same thing with the veggies but just as they begin to soften adding hunts plain tomato sauce and letting sit over low heat for 30 mins. Add broccolli to the dish as a side or on top of the sauce.
Or if you don't like red sauce you could make a parmasean or feta sauce but simply adding the pasta to the saute after cooking, sprinkle the cheese on top and cook for an aditional 5-10 min until the cheese melts, you may have to add some more olive oil for this one.
Spices are always a good addition to everything!
Oh yea and garlic should be added no more than 30 sec before tomato sauce so it doesn't lose its flavor
