COUSCOUS-SALAD IN TABBOULEH-STYLE

Steam or soak the couscous as you normally would. Saute some minced red shallots and garlic along with diced red and orange pepper. Mix everything together and add salt and pepper to taste. Mince some of you favorite fresh herbs and add them to the couscous. I like to use cilantro and parsley for Asian or Latin American flavor. I sometimes mix in toasted pine nuts and use basil and parsley for my herbs. You could use celery with the veggies and use lemon thyme in your herbs then hit it all with a splash of lemon juice or zest at the end, goes great with fish.

You can vary all the seasoning and ingredients to your own tastes and quantity needed or add ingredients you think would work. Like corn and diced chilies for a Southwestern flair or diced black olives and roasted red peppers for Mediterranean. Grill some veggies (whatever I have on hand) with olive oil and herbs, and put them over couscous made according to the directions using chicken stock, and add a dash of balsamic vinegar, salt and pepper. This is not my favorite food. This is the easiest way to cook.
Crack 2 eggs in a bowl and add some little bit of water and then beat it slightly. You can also put some vegetables in it such as some spinach if you want for example.
Anyhow, all you have to do is that you put the bowl into the microwave and press the time set about 2 and a half minutes or so.
I enjoy this recipe. I often fry eggs mixing some tuna..Cooking is one of the difficult jobs for me, haha... Good luck ~
