What is the best way to avoid the leftover pudding?


Answers: I'm assuming by what I think you are asking, that you want to make a small quantity so you only eat it once and not have any leftovers?

If that is the case, then you can take a small box of instant or heat and serve pudding, shake it up well so you mix everything in the package thoroughly, pour into a cup and measure out exactly how much mixture there is. Then take exactly 1/4 of the mixture and divide the amount of milk or whatever liquids the recipe calls for into fourths. If it calls for 2 eggs, break one in a measuring cup, stir it up, and measure out half of it. You could use just the yolk or whites but it could change the texture of the pudding.

OR, you could make the pudding from scratch. Here is a recipe that makes 1 small bowl of custard with no leftovers.

This recipe cooks in a pan:

QUICK CHOCOLATE PUDDING FOR ONE

1/4 c sugar
1 T cocoa
2 1/4 tsp cornstarch
dash salt
1/2 c plus 1 T milk
1 1/2 tsp butter
1/2 tsp vanilla

Combine sugar, cocoa, cornstarch and sald and stir in milk. Cook over medium heat until mixture boils. Boil and stir 1 minute. Remove from heat, blend in butter and vanilla.

Here's a baked custard for one

BAKED CUSTARD FOR ONE

1/2 egg - lightly beat a whole egg and then use half
1/2 c milk
5 tsp sugar
1/2 tsp vanilla
dash salt
1/8 tsp nutmeg

Put egg in a bowl. Add milk, sugar, vanilla and salt. Pour into 1 ungreased 6 oz custard cup. Sprinkle with nutmeg. Set in a pan containing 1/2" -1" hot water. Bake uncovered 350o for 35 minutes or until set.

(You can bake that in a toaster oven if you have one instead of lighting off the big oven)

MICROWAVE CUSTARD FOR ONE

1/2 c milk
1 egg
1 1/2 T sugar
1/4 tsp vanilla

Beat until blended. Place cup uncovered in the microwave and zap on HIGH 1-1 1/2 minutes, stirring every 30 seconds. Pour through a strainer into a custard cup. Sprinkle with nutmeg. Put back in the microwave. Set a 1-cup glass measuring cup containing 1 c lukewarm water alongside it. Cook uncovered at 50% power, rotate a quarter turn every minute just until the custard appears barely set and jibbles slightly all over when gently shaken 3-5 minutes. Remove, let cool 10 minutes. Serve warm or cold. Eat all of it at once? dont make direct eye-contact with it.
