Simply log onto recipelink.com and under "search" type in "how to cook a rolled roast." You'll find several recipes there. i have an origanal recipe..i take about half a cup of italian dressing and one fourth a cup of worschestchire sauce pour it in the pan and put your roast in top with some sliced onions and add some garlic.. cook at 400 till brown and turn it over then cook till desired doneness...delicious!!! cook slowly in covered dish with small amount water 3to4hours allow to cool overnight use juices to make gravy slice and eat with veg turns out tender and yummy good luck Quick and easy from:

ROLLED ROAST BEEF

Set oven for 325 degrees. Cook for 20 minutes per pound. Use heavy Dutch oven or wrap in aluminum foil. Use 1 medium onion per pound of meat. Season with Mrs. Dash, do not use any salt. Wrap meat and onions with seasoning in foil or place in cooking pot with lid. A slow oven makes the meat tender. There should be drippings for gravy if desired. I just got this receipt from "GOOD HOUSE KEEPING" that allows you to cook this roast in a heavy Dutch Oven.Brown the meat on all sides in3 table spoons of oil(could take 20 minuets) adding salt and pepper as you do this on a mild heat.Then add a sliced small onion and 2 table spoons of water,cover with a heavy lid and cook for about 4 hours.Turn every so often.About 50 minuets before it is done add vegetables like potatoes,carrots .40 minuets before it is done you can add green beans.Spices to taste.Good luck. Remove roast from refrigerator, remove the wrapping. If the roast is tied with kitchen twine, leave it tied until after it's cooked.

Season the roast with salt and pepper and leave at room temperature for 30 minutes (or up to 1 hour) before roasting.

Preheat oven to 325 degrees F.

Place roast in a heavy roasting pan, fat side up, and surround the roast with 6 whole cloves of garlic for added flavor. Can add chopped carrots, celery and onions, if you like.

Place in oven for about 2 hours.

Carefully remove roast from oven and allow to rest in roasting pan for 20 minutes before slicing.

Transfer roast to a clean cutting board. Cut away and discard the kitchen twine.

Slice the roast and arrange on a decorative platter. Collect the juices that accumulated in the roasting pan while cooking, and pour over sliced roast just before serving.

Can serve the vegetables with the roast if you like, or discard them.
