Steak and Potatoes?!
Steak and Potatoes?
I've cooked steak and potatoes before, but I'd like to try something new for a nice dinner for my husband. I couldn't find anything in my cook books, so I was wondering if anyone has any good tips for me to try?? I've got loin new york steaks and regular potatoes, any southerners by chance?? My husbands family is southern and he's real big on southern food, but I'm un-eduacted on southern food.....

**********PANFRIED PEPPER STEAKS
With Roasted Parmesan Potato Slices.
2 large potatoes (about 1 1/4 lb.)
Olive oil
Salt
3 tbsp. grated Parmesan cheese
1 med. sized onion
2 beef r\ steaks, each 1 inch thick
1 tsp. coarsely ground black pepper
1/4 c. balsamic or red wine vinegar
About 30 minutes before serving, preheat boiler if manufacturer directs. Slice unpeeled potatoes crosswise into 1/4 inch slices.
On ungreased jelly roll pan, arrange potatoes in a single layer, overlapping slightly if necessary. Drizzle potatoes with 2 tablespoons olive or salad oil and sprinkle with 1/2 teaspoon salt. Place jelly roll pan with potatoes in broiler about 4 inches from source of heat. Broil potatoes 10 minutes turning them once. Sprinkle potatoes with Parmesan cheese. Broil 3 to 4 minutes longer until cheese melts and potatoes brown.
While potatoes are broiling, dice onion. In 12 inch skillet over medium heat in 1 tablespoon hot olive or salad oil, cook onion until tender with slotted spoon, remove onion to bowl.
Sprinkle steaks with pepper and 1/2 teaspoon salt. In same skillet over medium high heat, in 1 tablespoon hot olive or salad oil, cook steaks until browned on both sides, about 8 minutes for rare or until of desired doneness. Place steaks on warm platter. Keep warm.

Cut some russet potatoes into fries and either deep fry them in a pot on the stove(350degree oil) approx. 4 min. or bake them in the oven(400F) for 20 min..
Deep frying=when they are done, pat off the excess grease and season them to taste with salt/pepper/parsley flakes.
Baking=Drizzle Olive oil over the fries and season before putting in the oven.

Have a nice evening with your husband and Enjoy! Well, I'm about as southern as they come and in my opinion with steak and potatoes your best bet is to keep in simple. Charcoal grill the steaks medium rare. For the potatoes, if they are russets, bake them and if they are new potatoes, boil them and toss them in butter with a sprinkle of parsley.
Ok, that being said, if you want to get fancy you can do a mushroom bordalase sauce. For this pan grill the steaks over a fairly high heat. It doesn't take long, about 3 minutes a side. Set on a plate, cover with foil and let rest while you do the rest.
Saute some onions and mushrooms in butter and set aside. Make a roux with the left over butter (that means stir in about a teaspoon or so of flour to mix in with the melted butter and let it cook for a couple of minutes until it is light brown in color). If you don't have enough butter in the pan to start with add some before adding the flour. Deglaze with red wine (turn the flame off and pour in about a half cup or so). This releases all of the crusty stuff at the bottom of the pan and turns it into a wonderful sauce. Turn the flame back on low and add mushrooms and onions back in. Let simmer for a few minutes to cook out the starch and let thicken. If it gets too thick, add a bit more wine. Salt and pepper to taste, of course. Use this as a sauce for the steaks.
-- Edit --
Please don't ruin a good New York strip by chicken frying it. that would be almost a crime against humanity. Chicken frying is for round steak, not a quality loin cut. Southern Steak Sauce Recipe

Recipe: Sensational Southern Steaks
1 teaspoon garlic salt
2 teaspoons Dale's? Steak Seasoning
2 teaspoons Dr Pepper?
Lightly coat the steaks with oil. Season evenly with the garlic salt. Drizzle the Dale's seasoning and Dr Pepper all over the steaks. Let the steaks stand at room temperature for 20 minutes to 30 minutes before grilling. With the lid closed, grill the steaks over direct medium heat (400°F to 450°F) until cooked to desired doneness, 12 minutes to 15 minutes for medium-rare, turning once. Let rest for two minutes to three minutes. Serve warm.
i hope it helps you!! well I guess it's all in the way you cook them. You could chop the steak up (after you cook it fully) cut some baked potatoes or sweet potatoes up along with some green peppers, zuchinni. (if you like) onions, and fresh parsley, cilantro, salt, and pepper. Fry this all in the same skillet with just 2 tbs of olive oil, when the vegtable mixture is fully cooked then add in the steak, this makes a great dinner, it is very filling. For a variation for this receipe you can always add a can of mushroom soup 1 can of water, and a packet of dried onion soup. Yum, both varieties are very good. Happy cooking.
