Another southern food idea?
I've been getting such great feed back, I thought I'd ask another...My very southern, food loving father-in-law, takes my husband and I, are two kids, my brother in law and his girl friend out for dinner once a week and always to a nice place. I would love to make him dinner one of these weeks instead of him taking us out to show my appreciation. What would be a good hearty meal that would make him feel "at home". I have a cook book his aunt had published and gave me a copy as a wedding gift, but I haven't really looked at it yet, I just thought I would ask people from experience before I flipped through the book....

He does love his sweet tea!!! Practice first! Make sure you have each dish perfected, but, they are very simple!
Cornbread... Use Jiffy cornbread mix, it is simple. Make some cornbread muffins.
Meat... fried chicken, fried pork chops, etc. They can get messy and complicated. Try a chicken and rice dish instead.

Stew a couple of pounds of chicken, in enough water to cover, until they are falling off the bone. Remove the chicken, take out the bones, put the chicken back into the broth in the pot. Slice about 2 large Vidalia onions really thin.
Add rice in proportion to the broth in the pot, approx 1 cup rice to 1 1/2 c. broth.
Bring broth to boil, add rice, salt and pepper to taste. When it comes to a boil, add chicken, stir quickly. Put onions on top and dab with butter. Cover, reduce to a very slow simmer. Cook about 20 minutes per cup of rice.
When done, toss rice with a fork to mix in onions and chicken. Season to taste, especially with extra black pepper.
Serve this with the cornbread muffins and a salad. Fried chicken, mashed taters & cream gravy, pinto beans, biscuits or cornbread, and some greens. Sweet tea to drink
