some olive oil
4 garlic sliced in half
1 can of imported Italian tomatoes
3 basil leaves, washed, patted dry and chopped
1/2 teaspoon of oregano
salt & pepper to taste
1. Place garlic and olive oil in large sauce pan.
2. Turn heat to medium and cook until garlic is soft and lightly browned.
3. Crush the tomatoes and add with their juices.
4. Fill empty tomato can 1/4 of the way with water and pour in with tomatoes
5. Add basil, oregano, salt and pepper.
6. Bring to a boil, then lower heat to a simmer and cook until thickened approximately 20 to 30 minutes. TARTAR!!
or thousand oceans i personnaly ...would do a reduction(in a skillet place an amount of wine and reduce that volume to 1/3 rd)...add some butter and finely diced garlic...how much...i love garlic...never too much...and butter...same here...start w/ some and you can always add more....wine 1 cup...butter 1/8 cup..and garlic 3 medium cloves...per pound of seafood....as a garnish i like to finely dice 1/8 cup sweet tomatoes...usually roma or grape...and 1/2 bunch parsley(again washed and finely minced.......after the reduction...add the butter and garlic...let is return to a fully melted ...garlic just starts to get colored...now add seafood....remember to cook it only for short time in small batches...overcooked seafood becomes rubbery and tough...that's why small batches ....if you mess up...you wont loose everything...at the end...add some garnish....even maybe add some parmissan to add more color....and flavor....dont bury this in any sauce.... 1 RECIPE
Seafood sauce,
melt butter in skillet and add seasonings, stir constantly and blend over medium heat for 5 to 10 minutes. Add half and half continue stirring and heat slowly until bubbly as you slowly increase heat (5 to 10 minutes). Add a dash of Cajun seasoning and wine stir until well blended and smooth and thick texture (2 to 3 minutes). Do not overcook.

1/3 c. sugar
1/3 c. vinegar
Ketchup
1 tbsp. Worcestershire sauce
Pepper
Horseradish for seafood

Bring to boil sugar and vinegar - dissolve, but NOT boil. Put in ketchup to thicken. Let it get hot again. Try 1 tablespoon Worcestershire sauce. DON'T let it boil. Add pepper. Let it get cold. Put horseradish in for seafood. just saute garlic in olive oil,add paprika,tomato sauce,basil,salt and pepper to taste! or saute it in garlic,onions,oyster sauce ,white wine,chilis,salt and pepper to taste.transfer to hotplate and serve! Start with a can of crushed tomatoes. Clean out the can with a cup of water and a cup of a good Italian white wine like Pino Grigio or Fontana Candida Frascati (which ever you choose, buy a second bottle to drink with dinner). Let the liquid reduce over medium heat by 1/3. Add 2 TBSP butter and 1 TBSP Old Bay seafood boiling seasoning. Also add some salt and fresh black pepper to taste. Let this simmer together for about 5 minutes and then add the seafood. Cover and cook for no more than 10 minutes. Remove from heat and spread on a platter. Serve immediately with plain white rice and either cole slaw (If informal) or a nice lettuce salad with mild dressing (if it is more formal). You don't want your sides to overpower the seafood. This is a quick sauce that tastes like it cooked all day and is really very good. The wine should be served chilled. For desert, I would get a simple bunch of green and red grapes on a platter with a mild cheese (i.e. Gouda, or even a bel paese) and some kind of biscotti.
