Can someone please teach me how to make Egg's Benedict; with Hollandaise sauce?

Best answer for the real deal made from scratch; ingredients, instructions, troubleshooting for common mistakes. Thank you if you can do it. On line recipes haven't done the trick for me. Thanks

Firstly to make Hollandaise Sauce:

1/4 cup dry white wine or dry vermouth
1/4 cup tarragon vinegar
1 spring onion, chopped
crushed pepper
1/2 teaspoon dried tarragon
3 egg yolks
250 g (8 oz) butter at room temperature

Place the wine or vermouth, vinegar, spring onion, pepper and tarragon in a saucepan and simmer until reduced to tablespoons of liquid.

Strain and cool.

Place reduced liquid and beaten egg yolks in a mixing bowl over a pan of simmering water.
(TIP: Don't let the water boiling in the bottom pan touch the top bowl.)

Whisk until the mixture thickens a little and then beat in the butter piece by piece, slipping it through your fingers to soften it slightly and whisking constantly. (TIP: I use an electric beater. Make sure you add the butter bit by bit and the heat remains on low simmer. Have patience!)

When all the butter has been added, remove the sauce from the heat and add some salt and pepper.

Makes about a half-cup of sauce.

TIP: You must serve the sauce warm. If the mixture goes curdly, add an ice cube and beat fast.

Eggs Benedict is served on toasted muffins or thickly sliced toasted bread of your choice, topped with lightly fried ham, and then a poached egg and then the sauce. But common varieties include substituting the ham for lightly fried baby spinach leaves.

4 egg yolks
1 tablespoon lemon juice
1 pinch ground white pepper
1/8 teaspoon Worcestershire sauce
1 tablespoon water
1 cup butter, melted
1/4 teaspoon salt
8 eggs
1 teaspoon distilled white vinegar
8 strips Canadian-style bacon
4 English muffins, split
2 tablespoons butter, softened


DIRECTIONS
To Make Hollandaise:
Hollandaise is easy to make in the blender. Place egg yolks in blender with the lemon juice (1 tablespoon is what I use) and other seasonings, turn blender on high speed for 5 seconds to blend. Melt butter in microwave until completely melted and hot. Turn blender back on high speed and gradually pour in butter. It will thicken into a beautiful yellow hollandaise in 20-40 seconds.
Preheat oven on broiler setting. To Poach Eggs: Fill a large saucepan with 3 inches of water. Bring water to a gentle simmer, then add vinegar. Carefully break eggs into simmering water, and allow to cook for 2 1/2 to 3 minutes. Yolks should still be soft in center. Remove eggs from water with a slotted spoon and set on a warm plate
While eggs are poaching, brown the bacon in a medium skillet over medium-high heat and toast the English muffins on a baking sheet under the broiler.
Spread toasted muffins with softened butter, and top each one with a slice of bacon, followed by one poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately. I can give you the recipe but about troubleshooting sorry,this is for fast hollandaise sauce;2eggs,100g melted butter,a pinch of cayenn,2tbsp lemon juice. Whisk eggs in a pan with the lemon juice;using a wire whisk. Gradually whisk in the melted butter into the egg mixture a trickle at a time,whisk over a low heat until thickened;do not boil or it will curdle,whisk in the cayenne. For eggs benedict to serve 1-2 people you will need 2slices of bread,butter or margarine for spreading,2eggs,2slices of ham.Mqke the hollandaise sauce first.Cut a large round from the bread and spread with the marg or butter on both sides then fry saute on both sides.poach the eggs.Preheat the grill,cut the ham to fit the fried bread,set on top of the bread and place on plates.Top with the poached eggs then spoon over the hollandaise sauce,then place under a hot grill for 1-2mins to brown slightly.I hope this helps good luck.
