How do you roast beetroot?

I have just been given a load from my father in law and cant stand beetroot but i do love those roasted mixed root veg crips. how do i roast them? thanks for your help,

Answers: part boil like spuds then stick in hot oil then shove in the oven on 200 for about 45-55. I think, im kinda making it up as i go along... have never tried it my self but if i was to try it i would do it like this, i cant wait till tomrrow.... my boyfriend has a lovely roast planned... yum yum... Never heard of roast beetroot but I boil it till the skin rubs off. I suppose you can roast it try chipping it the put it in some kitchen foil then put in a hot oven for 1/2hr.remember that it bleeds once it is cut so watch out for the mess Dont roast them - fry them they make great chips very sweet, so you will need something like sour cream to really enjoy hey u can just spread salt over it and then put it in a stick and keep it over gas for 15 mins n enjoy I usually peel them then cut into quarters and coat with garlic oil and roast as you would potatoes I've grown them and roasting is the best way to cook them.
Don't cut the ends else they will bleed, lightly wrap in foil, bake in med oven about an 1 hour depending on size.
Scrummy!
