Mango salsa for fish?!

Mango salsa for fish?

I'm making grilled salmon for dinner. I love to top it with Mango salsa, but Mangoes are not in season. Can anyone reccommend something similar? Also, can I replace the mango with something else?


Answers: I have a recipe that uses peaches with the mango to make the salsa. peaches have different taste of course but similiar texture and color. My cookbook mentions that canned or jarred mangoes can be used. Just make sure you drain them. Hope this helps. Mango salsa is a great with fish if not mango then how bout Lime salsa?? Tastes just as good! How about a nice grilled-pineapple salsa?

1 medium ripe pineapple, trimmed, cored, quartered lengthwise and cut again lengthwise
Drizzle extra-virgin olive oil
2 limes, juiced and lime halves reserved
1 small red onion, minced
1/2 bunch fresh mint, leaves finely chopped (about 1/2 cup leaves)
1/2 bunch fresh cilantro, leaves finely chopped (about 1/2 cup leaves)
Couple pinches kosher salt
Superfine sugar, optional

Salsa:
Heat a grill pan or griddle over medium-high heat. Lightly rub the pineapple pieces with oil. Grill on all sides, about 2 minutes per side or until lightly caramelized with nice char marks. Remove from grill and set aside to cool slightly.

Cut grilled pineapple into 1/2-inch dice and add to a medium bowl. Add all remaining salsa ingredients, including the lime halves. These will lend the additional lime oils in the rinds to the mixture, making a more aromatic salsa. use papaya, lime and chilli salsa for grilled fish like tuna...check the waitrose recipes for it..its super!

Apple Salsa
1 lemon
1 lime
3 ounces honey
2 granny smith apples cut into small chunks
1 white onion
1 poblano peppers
3 ounces fresh cilantro
Mix above and enjoy!
If you choose not to use apples - pineapple will be fine - use the canned tidbits in own juice. Honey dew Mellon
cantaloupe Sure you can. You can substitute any cool dense textured friut that is sweet, but some kind of melon or pineapple would be best.
