I will express post some to you in the UK - may not taste as good by then though!! i freeze mine you just have to becareful when re heating it as rice can contain bacteria if not re heated mega hot. it not as nice re heated though bit dryer but if you add water when warming it up it helps Don't know Daisy but if you've got too much I'll eat it! Love a good risotto!!!!!!! It's possible but not recommended. But I do know of some who do freeze leftover risotto by shaping cooled risotto into approx. 2-3" patties and coating them with bread crumbs & stack the patties between sheets of waxed paper and transfer to an ice cream container or other rigid container that holds them. To serve, cook the frozen patties in a lightly buttered skillet for about 5-6 minutes on each side. Drain on paper towels. If you don't mind losing texture, frozen risotto should be fine for freezing and reheat it just won't have that original texture. That is how a friend of mine does it.
