What is a good muffin recipe?
Answers: My favorite muffins are from Mimi's Cafe and they share some of their most requested recipes.
Buttermilk Spice Muffins
Muffin Batter:
1 cup sugar
1/2 cup butter or margarine
3 eggs
2 1/2 cups flour
2 teaspsoons baking soda
1 teaspoon nutmeg
1/2 teaspoon cinnamon
Nut Topping:
1/2 cup sugar
1 cup walnuts, finely chopped
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Grease the baking tins with butter or margarine
Method
Preheat oven to 375°. In a mixing bowl, cream the sugar and the butter together with an electric mixer. When they are thoroughly mixed, add eggs and beat one more minute.
Sift the flour into a separate bowl, together with the baking soda, nutmeg and the cinnamon.
Add the flour and the buttermilk to the first mixture, mix at low speed until smooth. To avoid lumps in the batter, add the wet and dry ingredients alternately, in small amounts.
Make the nut toppping: Mix all ingredients together in a small bowl.
Grease muffin tins with butter or margarine. You can also use paper baking cups. Fill each cup 3/4 full of batter. Add a full, rounded tablespoon of nut topping on top of each muffin cup of batter. Bake immediately or the topping will sink to the bottom of the muffin.
Bake at 375° for 20-25 minutes, until golden brown. A toothpick inserted in the middle of the muffin should come out dry. Home ovens heat differently from commercial ovens so you may need to adjust the temperature or the baking time accordingly.
Recipe yields 12 standard-size muffins, or six Mimis size muffins. If using the jumbo muffin pans, reduce the oven temperature by 25° and increase the baking time 5-10 minutes. Source(s):

1 stick unsalted butter, plus 2 teaspoons, at room temperature
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup orange blossom honey
2 large eggs, at room temperature
1/2 cup buttermilk, at room temperature
1/2 teaspoon grated orange peel
1/2 cup pitted, chopped dates
1/2 cup chopped toasted walnuts
Orange Honey Butter, recipe follows
Place a rack in the middle of the oven and preheat to 375 degrees F.
Lightly butter a standard 12-cup muffin pan with the 2 teaspoons of butter.
Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, using a hand-held electric mixer, cream together the remaining 1 stick of butter and honey until fluffy.
Add the eggs, 1 at a time, beating after the inclusion of each.
Add the buttermilk and orange peel, and beat to combine.
Stir in the dry ingredients until just combined, being careful not to overmix the batter.
Fold in the dates and nuts.
Divide the batter among the prepared cups of the muffin tin.
Bake until golden brown and a tester inserted into the middle of a muffin comes out clean, about 25 minutes.
Remove from the oven and turn out onto wire racks to cool.
Serve with Orange Honey Butter.
Orange-Honey Butter:
1 stick unsalted butter, at room temperature
3 tablespoons buckwheat honey
2 teaspoons fresh orange juice
1/2 teaspoon finely grated orange peel
Pinch salt
In a bowl, combine butter, honey, orange juice, peel, and salt and, using a hand-held electric mixer, mix until fully incorporated. Transfer to a decorative crock or small bowl. Cover with plastic wrap and refrigerate until slightly firm.
Yield: about 3/4 cup
Date-Orange Muffins Recipe
1 whole orange (well washed)
1/2 cup orange juice
1 egg
1/2 cup butter
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup honey or white sugar
1 teaspoon salt
1/2 cup chopped dates
Preheat oven to 400 degrees F.
Cut orange in pieces and remove pits.
In food processor, put in first 4 ingredients.
Blend for 3 to 4 minutes.
Sift dry ingredients into a bowl.
Mix in chopped dates.
Blend again until mixed.
Spoon into greased muffin pans.
Bake at 400 degrees F for 15 minutes. (If using honey, add with first 4 ingredients, if using sugar, add to dry mix.)

1 stick softened butter or margarine
2 eggs
1/2 cup milk
Cinnamon and sugar for topping
Preheat oven to 375. Grease cake pan (13" x 9") or line large muffin tins with papers. Cream butter with sugar. Add eggs. Add flour and baking powder mixture alternately with milk. This makes a nice thick batter. Fold in the floured blueberries. (Flouring them helps to keep them from sinking.)
Put in the pans. Top with cinnamon sugar. Cook for 25 to 30 minutes - use toothpick test, especially if you use another sort of pan than specified.
