How do I get my frying oil to 350?
I want my oil to get to 350. I don't have a thermometer. What setting should I use on my electric stove-top? (medium, medium high) For how long at that heat setting should the oil preheat in order to reach 350?
Please...only answers from people who know. I am going to be eating what I'm cooking after all. :)

Using a large cast-iron pan to fry chicken. Using about 2 inches of oil. Medium. Give it four minutes / or when the oil is bubbling. That should be right. You really should invest in a thermometer. They are not expensive. And you must have a REALLY old electric stove. Most now have a heat guage on the dials,...since about 1965-70. (?) When you start to see the oil shimmer and then it will smoke. Lower it at that point and cook. Enjoy. Throw in a frozen french fry and when its starts to fry and turn brown its usually about 350. Start out on high then lower your stove to about medium high (usually) when you are ready to add the chicken. heat it on medium...cast iron takes longer to get hot.
when the oil starts moving around in the skillet it should be hot enough. i usually take a little piece of whatever im fixing a drop it in the oil. and if it sizzles then i know its ready. you should start of on high until it starts to boil then turn it down to med-low and then put your chicken in the oil and cook away!!!
don't forget to enjoy the chicken you have justed cooked and home made fries are great with chicken!!!!<ab> You asking a question that has way to many variables. Every stove is not created equal. Medium setting on mine may be medium low on yours, when dealing with cooking oil, it is much safer to just break down and by the $5 candy/fry thermometer at your local wal-mart.
