What sides do you put with coconut crusted tilapia??

I'm trying to make a special dinner for my husband and I can't find anything to go with the tilapia...


Answers: rice pilaf and roasted asparagus drizzled with balsamic vinegar (since the coconut tilapia will be on the sweet side) mashed sweet potatoes popped into my head. i think they'd be yummy together! i would make green beans (w/almonds if you want), and a baked potato, whats for dessert? how about strawberries in bed :) A coleslaw with coconut flavoring. http://www.thingsasian.com/stories-photo... This is a recipe that I am just starting to make. I find that it is very interesting and get's mixed responses. My husband who doesn't like rice, likes it, my daughter, who does like rice thinks it needs another dip. She is 6 and loves it with ketchup.

I cook the rice (not minute rice) according to package directions in the mic. I use chicken stock and about 1 tbsp. extra salt. I find this works well because it always undercooks the rice. Once it is done I add fresh herbs. Cilantro will probably work well with yours. Lime zest will probably work as well. Once it is cool form into 3/4" patties and sautee until they are crispy and browned on each time. As soon as they come out season again with a little salt.

For your dip (you will have extra) add 1 can of full fat coconut milk, 2 chipotle peppers (you might like less if you don't like too spicy), about 3 tbsp. of cilantro the juice of half a lemon, and a sprinkle of salt and pepper. It's a pretty thin sauce, but works well with the richness of the rice. Oh, I forgot put it in the blender. Considering the coconut on your fish a chunk or two of fresh pineapple might do it well.

Also, think outside the box. Grill up some tropical veggies. Mango, papaya and pineappl all grill up well. And if all else fails you can always make tostones.
