I'm not a very good cook, so I'm trying to impress my husband with a nice dinner (he usually cooks). He like's crock pot food, and I happen to have a small rump roast. I really want to impress him with my cooking...for once. (lol)
Answers: Good call on the crock pot. Very easy and fast to set up. Cut up 2 to 3 carrots, 2 to 3 potatoes, 2 to 3 onions. Put 1 cup of water and 2 to 3 beef bullion cubes in. Rub roast with veg. oil, salt and pepper to taste , place meat in fat side up,put lid on and depending on how fast, either set on low or high. (low cooks for 8 to 10 hrs. and high for 4 to 6 hrs.) Other items I add are celery sticks (including the tops) and whole garlic. But not necessary. Yummy!

add an envelope of onion soup mix,
a can of stewed tomatoes,
cloves of garlic and celery pieces
when done....................in 4-6 hours, turn off
add 2 CANNED baby potatoes and
baby carrots, you have boiled separately, not in the crockpot
cover.............it will all stay hot hours Take the rump roast, and sear (brown) it on all sides in a little olive oil in a large skillet. Place it in the crock pot, and cover with a packet of onion soup mix, a 10-oz. can of cream of mushroom soup, a 10-oz. can of cream of celery soup, and one can of beef broth, heated up. Cover and let simmer for 4 hours on high, or 8 hour on low. During the last 30 minutes of cooking, remove the lid to allow some of the steam to escape for 15 minutes, then recover for 15 minutes. This helps to make a thick, delicious gravy with very little effort.
While the roast is cooking, make mashed potatoes by boiling two large baking potatoes, cut up into small pieces, with or without skins on. Make sure to wash and scrub the potatoes thoroughly before cutting up and boiling. Boil for about 20 to 30 minutes. Drain potatoes, then add about half a stick of butter or margarine, ? cup of milk, salt and pepper to taste. Mash potatoes using wire wisk, electric mixer on low, or potato masher if you have one.
To balance out the meal, get a bag of pre-mixed salad and low-fat salad dressing.
For dessert serve chocolate brownie or a fruit cobbler with vanilla ice cream or Cool Whip. heres one
Crock Pot Spicy V8 Roast

Change to: servings US Metric
3 lbs roast (whichever you prefer, I usually use Rump)
2 cups spicy hot V8
1/2 cup roasted green chilies
1/2 yellow onion
4-5 potatoes
garlic
salt
pepper
gravy (use 1 cup broth from crock pot)
1 1/4 ounces Lipton Onion Soup Mix
1 (8 ounce) can 98% fat-free condensed mushroom soup
Cut up roast into 8 to 10 chuncks place in crockpot.
Quarter onion and place in crockpot.
Quarter potatos and add to crockpot.
Add Chopped Roasted Green chile.
Add V8 juice.
Add water to fill crockpot.
Season to taste.
Cook on low for 8 hours or on high for 4 hours.
have a good dinner !! I love using the crock pot...it is so easy! Along with roast I use baby carrots, a white onion, and potatoes. I buy the McCormick Slow Cooker mix, it's right in the seasoning section with the salt, pepper, garlic at the grocery store, so easy. Mix all that with 1 cup of water, cook on high for 4 hours or low 8 hours, the roast falls apart and the veggies are so tender! You'll look like a gourmet chef! Serve with warm rolls and maybe some rice or egg noodles...YUM-O! It is a family pleaser! And super inexpensive! My mom cooked a roast beef in the crockpot over night, she added potatoes and a can of beef gravy. It was good.
I like to add carrots and onions. personally, I'd add one quart of cheap beer, an onion pierced with maybe 6 whole cloves, and then a few, maybe 6 cloves of peeled, and smashed garlic.
After cooking for a couple of houtrs, remove the beer and put in a pot to reduce.
