Answers: Twice Baked Potatoes
1 large baked potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. Heat the potato flesh. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
Bake for 15 minutes or 20 minutes in a 350 degree oven. You can grate them up, add salt and pepper and fry them in oil for hash browns. You can also slice them (peeled), fry them in oil with some cubed ham. When potatoes are browned scramble in a couple eggs. Makes a hearty meal. Soup:

Make hash as breakfast side dish or as an ingredient in potato pancakes which you salt & pepper and eat with a little applesauce & sour cream on the side. I HAVE A GREAT RECIPE THAT I LEARNED FROM MY MOTHER.
SLICE THE POTATOS IN MEDALLIONS, SLICES ABOUT 1/4 INCH THICK AND SET ASIDE. CUT UP SAUSAGE INTO SLICES ABOUT THE SAME SIZE. PLACE SAUSAGE IN A FRYING PAN,
ADD ONE WHOLE CUT UP ONION, PREFERABY A SWEET ONION LIKE A 1015. BROWN THE SAUSAGE THOROUGHLY. THE ONION WILL BROWN TOO. ADD THE POTATOES. AND BROWN THEM. STIRRING GENTLY TO NOT BREAK THEM ALL UP.
PUT SALT AND PEPPER TO TASTE. ADD ONE CAN OF SAURKRAUT, LIQUID AND ALL, ADD A SMALL AMOUT OF WATER. COVER AND COOK FOR ABOUT 10 MINUTES.
YOU CAN MAKE THIS WITHOUT THE SAURKRAUT, TOO. IT IS DELICIOUS AND CAN BE PUT IN A TORTILLA WITH CHEESE AND SALSA OR EATEN AS IS. You can make Mexican potato boats, peel them and fry the skins for dipping, or just cube them up for hash or American Fries. Or toss the cubes into a baked potato soup. And twice bakes.
At work I used to purposely cook extra potatoes for all these. Cut your baked potatoes into cubes(not to small), put them in a skillet with a little of butter and fry them. They make a wonderful addition to your breakfast menu or any menu. Make potato skins Homefries,cottage potatos,twice baked potato,or potato soup. My family loves it when I take the left over baked taters and mash them - skins and all- mixed with sour cream, cheese, bacon, and butter.
They also love it when mashed with Butter, cream and roasted garlic. It's a great way to revitalize your leftovers and fit with most any meat you might be preparing. Slice 'em up and fry 'em up with butter, salt, and pepper, and oh yeah!! A bit of ketchup at the end tastes good too. Potato and Leek Soup
1 cup chicken broth
1 1/2 cups milk
2-5 pounds of potatoes
Two leek stocks-split and diced into small pieces
a sprinkle of pepper and garlic
peel, Cut up potatoes and put all ingredients together in a large pot and start to simmer. Stir occationally until potatoes soften enough to mash into the leeks usually about 25 minutes. Mash everything together and then keep heating for an extra ten minutes. Usually best served with rolls. you could make mashed potatoes with it,friend hashbrowns, or warm up the potatoes and pour some chilli on it with some sour cream
