Pound your chicken thin. Dredge in a mixture of milk and egg. Then into breadcrumbs. Brown in olive oil. You can serve this with anything.
Getting fancy with the breadcrumbs is what counts here. Add 1 clove of chopped garlic, a palmful of parm cheese, and a tbsp. of fresh or tsp. of dried parsley. Mix everything in a crock pot and cook on low heat for 6 hours. Serve over white rice. Very good and very easy!
Take Chicken breasts (boneless skinless) and dip in oil. Then dip in crunched up BBQ potato chips. Should cover the chicken nice and even. Bake on a cookie sheet at 400 for about 20-40 minutes (until good and done). This too is very tasty and easy! Chicken brest and cream of mushroom or cream of chicken baked in the oven. 4 cans (5 oz. each) shredded chicken in water
1 can (10.5 oz) cream of chicken soup
1/2 can (5.25 oz) milk
1 box (6 oz) chicken flavored stuffing
7 american cheese slices
handful of broccoli
chicken seasoning
all-purpose seasoning
pepper
Drain chicken, place in buttered 9x13 covered dish. Sprinkle the chicken with pepper and seasonings.
Mix soup and 1/2 the size of the can worth of milk. Pour over chicken.
Fix stuffing according to the directions on the box and spoon it over the soup.
Sprinkle broccoli on top and arrange slices of cheese to cover all.
Cover casserole dish with lid or foil bake at 350 for 1 hour. Chicken Cordon Bleu [4 serv; ready in 45min]
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Easy Bistro Chicken
2 tsp. oil
3 cups sliced fresh mushrooms
1 medium onion, chopped
1 can (15 oz.) stewed tomatoes, undrained
1/4 cup Italian Dressing
3 Tbsp. tomato paste
4 small boneless skinless chicken breast halves (1 lb.)
1 cup Mozzarella Cheese
2 slices Ready to Serve Bacon, crumbled
HEAT oil in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 5 min., stirring occasionally. Stir in tomatoes, dressing and tomato paste.
ADD chicken; cover. Reduce heat to medium-low. Simmer 12 min. or until chicken is cooked through.
SPRINKLE with cheese and bacon; simmer, uncovered, 5 min. or until cheese is melted.
