What would be a good dessert for a fiesta?

We are having a fiesta potluck at work tomorrow. What could I bring as a dessert that would be delicious and easy, but still would go with the fiesta theme?

Margarita Cake

INGREDIENTS
1 (18.25 ounce) package orange cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 eggs
1/2 cup vegetable oil
2/3 cup water
1/4 cup lemon juice
1/4 cup tequila
2 tablespoons triple sec liqueur

1 cup confectioners' sugar
1 tablespoon tequila
2 tablespoons triple sec liqueur
2 tablespoons lime juice

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.
Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.
To make the glaze: In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.

Churros

INGREDIENTS
1 cup water
2 1/2 tablespoons white sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour
2 quarts oil for frying
1/2 cup white sugar, or to taste
1 teaspoon ground cinnamon

DIRECTIONS
In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.
Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels.
Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

Mexican Cookie Rings

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
2/3 cup white sugar
3 egg yolks
1 teaspoon vanilla extract
5 tablespoons multicolored sprinkles (jimmies) (optional)

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
Sift together flour, baking powder and salt.
Cream together the butter and sugar. Add the egg yolks and vanilla, beating until light and fluffy. Mix in the dry ingredients.
Shape into 1 inch balls. Push your thumb through center of each ball and shape dough into a ring. Dip top of each ring in decorating candies. Place cookies onto the prepare baking sheets.
Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes or until golden brown. Remove from the baking sheets and let cool on racks.

Tarta de Santiago (St. James' Cake)

Ingredients
For the base:

1 Egg
4 oz Sugar Flour (about two glasses)
Cinnamon
A spoonful of Water
For the filling:

4 Eggs
8 oz Sugar
8 oz gm of Ground almonds
Lemon Rind
Cinnamon
Icing sugar
Preparation
To make the base, beat the egg with a spoonful of water, the sugar and a little cinnamon.

Gradually add the flour until it forms a mixture than can be kneaded.

Roll it out with a rolling pin and line the bottom of a tin that has been greased and sprinkled with flour beforehand.

For the filling, whisk the eggs with the sugar and the lemon rind. When it begins to froth, add the ground almonds and the cinnamon.

Fill the tin with this mixture and place in an oven pre-heated to 180oC for about 25-30 minutes.

For the final touch, cut out a St. James cross out of cardboard, place it in the middle of the tart and dust the whole tart with icing sugar. When you remove the cross, the shape will remain engraved on the tart. sopapillas or torrejas Churros. I was going to say Tres Leche cake, but that's too time consuming. You might even find churros if your grocery store has a Spanish aisle. if you have a place that sells it by your house
get some pan dulce. In the more Hispanic areas of Texas, fruit cups are a very common dessert. It is basically just a fruit salad served in a cup.

If you will have access to an oven, make Cinnamon crisps. Cut flour tortillas into wedges. Spread them with butter and sprinkle with Cinnamon sugar. Bake and serve. Best right out the oven, can get 'hard' if you try to bake them ahead of time.

If you really want to 'bake', make flan. Egg custard with caramel. Great stuff. How about flan? It is a traditional Mexican dessert similar to custard or pudding. Here is a link to recipes:
