Seasonal autumn meals?
what are some traditional meals you eat in the fall? its my favorite season and I want to try some new autumn appropriate recipes.
(please give me recipes too!)
Answers: I love fall!!! These are some favorites:
Pork chops with apples, onions, and sweet potatoes
4 pork chops
salt and pepper to taste
2 onions, sliced into rings
2 sweet potatoes, sliced
2 apples - peeled, cored, and sliced into rings
3 tablespoons brown sugar
2 teaspoons freshly ground black pepper
1 teaspoon salt
Preheat oven to 375 degrees F (190 degrees C).
Season pork chops with salt and pepper to taste, and arrange in a medium oven safe skillet. Top pork chops with onions, sweet potatoes, and apples. Sprinkle with brown sugar. Season with 2 teaspoons pepper and 1 teaspoon salt.
Cover, and bake 1 hour in the preheated oven, until sweet potatoes are tender and pork chops have reached an internal temperature of 160 degrees F (70 degrees C).
Jamaican stuffed pumpkin- this is my annual birthday dish, in October.
i medium pumpkin ( should fit in your biggest stock pot and in your oven)
2 lbs ground beef
6 oz smoked ham
2 t oil
2 1/2 cups onion, chopped
2 green peppers, chopped
2 1/2 tsp salt
2 tsp olive oil
2 tsp oregano
1 tsp black pepper
1 tsp vinegar
1 tsp red pepper
2 cloves garlic
1 cup raisins
1/3 cup green olives ( optional- I don't like them...)
1 8 oz can tomato paste
3 eggs.
Cook ground beef and ham in oil until cooked through, add onions, peppers, and garlic and cook until softened. Add the rest of the stuffing ingredients and place aside to cool.
Cut the top off the pumpkin and remove seeds and pulp. Heat water in stock pot and boil pumpkin for 30 minutes, or until soft (you can also wrap in saran wrap and cook on high power in microwave for 15 minutes or until soft.) Put stuffing in pumplkin and place in shallow pan, add water to pan about half way up and cover top with foil- bake at 350 degrees for an hour. Serve with white rice and a salad. Tex-Mex Chili (Crock Pot)
1 lb ground chuck
2 garlic cloves, minced
3-4 teaspoons chili powder
1/2 teaspoon ground cumin
2 (15 ounce) cans red kidney beans, rinsed and drained
1 cup celery, chopped
1 cup onions, chopped
1/2 cup green peppers, chopped
1 (15 ounce) can diced tomatoes
1 (15 ounce) can diced tomatoes with green chilies
1 cup vegetable juice or tomato juice
1 (6 ounce) can tomato paste
1/4 teaspoon salt
Brown beef and garlic until brown, drain well. Stir in chili powder and cumin, cook 2 minutes more. In crock pot, combine beans, celery, onion, peppers. Add undrained tomatoes, vegetable or tomato juice, tomato paste, and salt.
Stir in meat mixture. Cover and cook on low 10-12 hours or high 4-5 hours.

bake pork chops in oven, decore the apples, boil in water in pan as the water evaporates and the apples get tender add brown sugar and cinamon red hots.

Homemade ground beef and vegetable soup
brown ground beef add to a soup pot and add a mixture of can or frozen veggies. We like pork n beans with a can of mixed vegetables. or the frozen ones. and stewed tomatoes.
Chilli and cheese toast (slice of bread, slice of cheese, toasted in the oven) *********OVEN-BAKED STROGANOFF
2 1/2 lbs. steak, cut in thin strips (good with venison steak)
1 lg. onion, thinly sliced
1 clove garlic, mashed
3 tbsp. flour
1/4 tsp. pepper
1/4 c. tomato paste
1/2 c. sour cream
5 tbsp. salad oil
2 c. fresh mushrooms, sliced
1 tsp. salt
1/4 c. dry red wine
1 bay leaf, crumbled
1/2 c. beef broth or consomme
In frying pan, brown strips of beef or venison in oil; transfer meat to 3 quart baking dish. Add remaining oil to drippings. Saute onion, garlic and mushrooms until limp. Remove pan from heat and add flour, salt, pepper, wine, tomato paste and bay leaf. Blend in beef broth. Stir until ingredients are blended. Pour over meat. Cover and bake in 350 degree oven for 1 hour or until meat is tender. Remove casserole from oven. Gently stir in sour cream and serve over cooked wide noodles. Roasted chicken,

Black olives,
Dessert of some sort, or ice cream,
Iced tea/water.
