Pork in Leek, Pea and Ginger Cream Sauce

Meat, vegetables and sauce in all one.

Ingredients
350g pork fillet cut into strips
Knob of butter
2 shallots finely chopped
1 clove of garlic, crushed
2” root ginger, skinned and finely chopped
4 leeks, trimmed, washed and sliced on the diagonal into about 2” thick slices
? pint vegetable stock
2 tbsp of soy sauce
? pint double cream
Handful of frozen peas

Fry the pork in a pan, remove and set aside. Gently fry the shallots, garlic, leeks and ginger in the butter for a few minutes, then add the stock, soy sauce and cream and bring to a boil. Return the pork to the pan, add the peas, turn the heat down and simmer for around 4 minutes until the peas are cooked and the sauce has thickened.

Great served with creamy mashed potatoes, or alternatively spoon into pie dishes, top with ready rolled puff pastry, glaze with melted butter and bake in an oven for about 10 minutes until you have a golden crisp topping.

enjoy! :) Maple syrup, cracked black pepper and paprika, leave for a min 1 hour but best left for 24 hours. Heat your pan with a dash of olive oil til red hot then seal your meat (couple of mins each side) then pop in t oven for roughly 20 mins depending on how thick your chops are. Add the rest of the marinade before you pop them in.
Serve with fresh leafy green spring cabbage and a lancashire cheese mash!

Ingredients
? 4 (4 oz. each) boneless center-cut pork chops, lean
? 1 tablespoon dry sherry
? 2 cloves garlic, minced
? 1/4 cup honey
? 1/4 cup lemon juice
? 2 tablespoons soy sauce

Preparation
Combine all ingredients except pork chops in small bowl. Place pork in shallow baking dish; pour marinade over pork. Cover and refrigerate 4 hours or overnight. Remove pork from marinade; heat remaining marinade in small saucepan over medium heat to simmer. Broil pork 4 to 6 inches from heat source 12 to 15 minutes, turning once during cooking and basting frequently with marinade. (May also be grilled.) I use this for center cut pork chops, I have never used it with bone in chops, but it should work as well.

I blend together about 1/4 c. soy sauce, 1/4 c. brown sugar, a pinch of salt and pepper, 2 cloves of garlic, a handful of fresh cilantro, 1/2 small onion, the juice of 1/2 a lime and 1 tsp. of some type of hot pepper. I generally use what ever I have on hand. I have even used crushed red pepper flakes. Blend it on high until you have a smoothe liquid. I like to poke holes in my porkchops with a fork, then put the marinade on it put it in a bag and let marinate for at least 2 hours. I generally do mine overnight. 2tbls Worcester sauce ,2tbls light soy sauce ,6 tbls runny honey , 1 tbls wholegrain mustard, 1 tbls dijon mustard and 6 tbls olive oil. Marinade overnight . A good squeeze of lemon juice, olive oil, Tea spoon of chopped ginger, Teaspoon of chopped garlic, Teaspoon of whole grain mustard, teaspoon of mild curry powder, a good squeeze of runny Honey, salt and pepper to taste. Mix all together, pop in pork chops and leave to marinate for a couple of hours. Then barbecue, grill or roast in a hot oven. The honey will caramelise and give a lovely flavour and colour.
Sorry i can't be precise on amounts, i just tend to throw it all together. 1 pound pork chops marinated in 1 tsp. lime, 1/4 cup soy sauce &lots of minced garlic...you may grill this or pan fry in butter... top with caramelized onions... over hot garlic fried rice....
