Peanut Butter Cookie Recipe?
I'm looking for a good recipe for peanut butter cookies. Mine are always turning out hard, and I want some yummy SOFT cookies!

* 1 cup crunchy peanut butter
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking powder

directions~
1. Cream together butter, peanut butter and sugars. Beat in eggs.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. The Perfect Peanut Butter Cookie Recipe
Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup creamy or chunky peanut butter
1/2 cup ( 1 stick ) butter or margarine, softened
1/2cup firmly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Directions
Preheat oven to 400 degrees
In a medium bowl sift to combine flour, baking powder, baking soda and salt
In a large bowl beat together peanut butter, butter, brown sugar, and granulated sugar until smooth.
Add in egg and vanilla
Combine flour mixture with peanut butter mixture, scrapping the sides of the bowl to insure batter is well blended.
Cover bowl with plastic and place in frig for 20 minutes
Using a teaspoon drop batter 1 inch apart on an ungreased cookie sheet.
Using a fork make crisscross pattern flattening cookies slightly.
Bake for 10 to 12 minutes per your oven 2 cups peanut butter

Yes I know there is no flour but we made these all the time while we were missionaries in Guyana because there was a flour shortage. They are soft and yummy if you do not over bake them. Take them out when they are just turning brown. maybe 10 - 15 min sounds like you are cooking them too long
