Answers: You can always clean and slice the bell peppers and freeze them for later. I like them in my baked beans! try this one.

Stuffed Bell Peppers

These are different as they are stuffed with sauerkraut. I adapted the recipe from Gudrun Rutschilka's 'Neue landfrauen Rezepte'. Posted for the Zaar World Tour 2006. These work extremely well in a R?mertopf, a clay pot, but you can use a normal casserole as well.

12 small bell peppers (mixed colours)
1 onion, chopped finely
6 tablespoons olive oil
1 lb fresh sauerkraut, if you can't find fresh use a tin
3 tablespoons tomato paste
1 tablespoon sugar
salt, to taste
pepper, to taste
1 bunch fresh dill, chopped
1/2 lb feta cheese, cubed
7 ounces creme fraiche
4 eggs, beaten
hot paprika, to taste

Cut the top of all peppers, and put it aside. Clean out all the seeds and inner bits, wasch and dry well.
Sautee the onion in 2 tbsp of olive oil until translucent. Add the sauerkraut and tomato paste. Add the sugar and season with salt and pepper to taste. Allow to simmer for 4-5 minutes.
Preheat the oven to 200°C/400°F/Gas 6.
Add the fresh dill and, feta and 3 tbsp creme fraiche to the sauerkraut.
Grease a casserole dish or deep oven tray.
Divide the filling between the peppers and place the in the dish.
Mix the eggs with the remaining creme fraich, a few drops of water and the paprika. Season with salt and pepper to taste. Pour into the oven dish.
Place the tops back onto the bell peppers and cover the dish either with a lid or strong tin foil.
Bake in the oven for 40 minutes.
After 40 minutes remove the foil, brush the tops of the peppers with a little olive oil.
Turn of the oven and allow the peppers to rest in the oven for a further 10 minutes.
IF USING A CLAY POT (R?MERTOPF): Water your clay pot for 20 minutes before using. Place the covered dish into a cold oven and bake for 1 1/4 hours at the same temperature. have you tried roasting it???

http://southernfood.about.com/od/stuffed... you should make stuffed bell pepers... im not shure how to make it but you stuff it with meat and rice it is really good... or you can grill them with a limon and dill sause... or you can chop them up and put them in a salad... Roast them and then cut up and pack them in jars in olive oil for future use in salads, antipastos. Here you go -

Stuffed Bell Pepper Soup
2-T. olive oil
1-T. minced garlic
2-cups chopped onions
3-large bell peppers, chopped into ?"squares.
2-14.Soz.cans sliced stewed tomatoes
1-pound ground chuck
1-8oz, cans tomato paste
2-cups cooked brown rice
?-tsp Satan's Breath? Cajun Blend
1-tsp basil
1-T. parsley flakes
?-cup soy sauce
?-cup red wine

Put the hamburger in a wok. Season it with the minced garlic. Brown it and drain it, set aside. Now add the olive oil and chopped bell peppers. Cook the peppers until they start to wilt. At that point add the burger back to the wok with the peppers. Now add the tomato paste, 1-can water, and the 2 cans of stewed tomatoes. After the tomato paste is dissolved into normal juice add the basil, parsley, soy sauce and red wine. When it starts to boil, add 2 cups brown-10-minute rice. Let it cook at a simmering boil for 10 minutes. It is ready to serve. Serves 6 to 8 Stuffed Bell Peppers!! Brown breakfast sausage with ground beef, onion, garlic and spices of your choice together with tomatoes and stuff the hollowed out pepper with this mixture. Top it off with cheddar cheese and serve to your family! It can also be frozen for later eating.
