Kosher Dinner Ideas?


I'm looking for some kosher dinner meals that I could make for my fiance and I. We're usually both pretty busy with school work, and don't even eat until 9 at night sometimes... and also I'm looking for anything different, I'm not the best cook, but I have 3 years of high school culinary classes, and get sick of eating the same kind of things day to day... any ideas on quick meals I could make and fit into our schedules?


Answers: English Muffin Pizzas... so much fun because you can customize them. Just leave out the pepperoni ;-) To make, just take an English muffin, cut it in half, cover in tomato sauce, cheese, and whatever else you want, then put it in the toaster. They're easy and you have the chance to be creative.

I'm also a huge fan of meals that you can make in large quantities, then freeze some for eating later on. My favorite of the moment is this really tasty Ethiopian chicken stew (http://yumsugar.com/437032). It freezes so well, and is great over some rice. Or do a little chicken stir fry - it takes ten minutes and all you need is pre-bought sauce, chicken, and whatever vegetables you want to add. I like peppers, onions, water chestnuts, and bamboo shoots - all kosher! Heat some peanut oil on your stove, on high heat. Add veggies, let them cook for a minute or two, then add chicken, then add sauce. Source(s):
I'm a busy Jewish student who likes to cook good things, fast. Fish! Just buy some fish fillets, heat a pan and put in some butter or olive oil, then when it is hot throw the fish in. Then season it liberally with salt, pepper, herbs, and lemon juice. It's very quick, and very tasty for so little effort. Pair it with some noodles or rice and a steamed vegetable (broccoli, spinach, asparagus) for a complete meal. here is one
6 Peppers



6 peppers - three light green, three dark red and three yellow/orange. cut open (lengthwise) into four pieces each, clean of membranes and seeds and place in a steamer. Steam for at least 20 minutes, then set aside to cool. After they are cool, cut on an angle to make strips. Place into a serving dish or container.

Sause:

3 tbs Soy Sause
3 tbs vinnegar (or dry white wine)
2 tbs water
3 cloves of garlic - crushed
2 tsp ground ginger
1 tsp mustard powder
1/4 tsp hot paprika
Salt and white pepper to taste

Mix separately and pour over the peppers. Sprinkle a little bit of olive oil over this and refridgerate for at least one hour before serving.

(It really looks pretty and tastes wonderful.)

Herbed Matzo Balls
Note: Serve with your favorite chicken soup recipe.

1 cup matzo meal
1 teaspoon kosher-for-Passover baking powder
1 teaspoon salt
1/2 teaspoon cracked black pepper
4 eggs, beaten
1/4 cup water
1 tablespoon oil
1 tablespoon chopped fresh dill
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley

In a large bowl, mix matzo meal, baking powder, salt and pepper. In a medium bowl, whisk together eggs, water, oil and herbs. Add matzo meal mix and blend well.

Cover and place in refrigerator for 15-20 minutes.

Bring a large pot of water to a boil. Shape matzo balls into golf ball size and drop into boiling water. Reduce to a simmer, cover and cook for 30-40 minutes (no peeking!). Remove from water and place in finished chicken soup.

Serves 6-8.

Pineapple Kugel
Here's an appeal-sounding pareve kugel.

Pineapple Kugel

Oil for preparing pan
1 pound medium noodles
5 eggs, beaten
1/8 cup fresh squeezed lemon juice
grated rind from 1 lemon
1 teaspoon vanilla extract
1 1/2 cups sugar
1/2 cup golden raisins
3/4 cup finely chopped pineapple chunks (see note)
1 cup pineapple juice (see note)
1/2 tsp. salt


Preheat oven to 350 degrees. Use oil to prepare a 13" X 9" baking dish.

Cook noodles according to package directions until al dente. Drain and rinse in cool water. Set aside.

Mix remaining ingredients together in a large bowl. Add noodles and mix to combine thoroughly. Pour mixture into a baking pan.

Bake 1 hour or until top is golden brown.

Serve hot.
