What makes a Yorkshire pudding rise?


I have put a recipie for Yorkshire pudding, on a Blog, to help our friends, over the water.

One friend asked me the above question and I havn't the foggiest idea!!!

Steam -Cream Puffs and Yorkshire Pudding Steam. Typically you mix the egg based batter for several minutes then pour into an extremely hot pan. The steam that is created is captured by the egg proteins that coagulate in the high temp and the "bread" rises.
