Question:

Does anyone have a great recipe for coconut shrimp?

Answers: Coconut Fried Shrimp
Serving Size : 4

1 cup baker's Coconut
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
1 lb. cleaned shrimp
1 egg, slightly beaten
Oil for frying

Mix coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.

Heat oil in large deep skillet on medium heat to 325F.
Add shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Serve with lemon wedges or a sauce, if desired.

Use oils with high smoke points for frying. Canola, corn, peanut, safflower and soybean are good choices. yes i have but i'll give it to u later Eww ...shrimp ! I love coconut though!

But i think all you do is dunk the shrimp into coconut right? lol I'm really not sure though! Don't quote me on that! Coconut shrimp is HARD!! Coconut burns way to fast.
Any receipe is good but you have to keep the shrimp constantly moving in the oil. Turn and turn over and over.
If you are using fresh coconut it has to be tried in the oven. 400 Degrees for 5 mins should be good "These crispy shrimp are rolled in a coconut beer batter before frying. For dipping sauce, orange marmalade, mustard and horseradish mixed to taste."

http://allrecipes.com/search/recipes.asp... i would soak the large, peeled, NON-FROZEN shrimp in parrot bay coconut rum and maybe a dash of fresh mint, a tiny bit of tarragon (always great on seafood), salt, black pepper, and maybe zest of lemon (very little to add just the right amount of zing) over night. then i would mix any generic shrimp breading with coconut shavings and a tad of brown sugar. then fry it. i dont really do recipes, i just kinda cook by feeling and smells and tastes, so thats as close to a recipe as i can get. just take that and make it your own! good luck!
... oh... and maybe rice with sliced almonds, red bell peppers, and lemon zest on the side... season as you wish of course :) yes you get coco soda and put in a pan and then put the shrimp let it cook for a hour i live in a shrimp area clean shrimp get the size of 9-12 means in a Pound one egg the yoke a little milk and whip it put salt and pepper and spice you prefer and stir good dip the shrimp in for about 1 hour and then warm up peanut or canola oil to 375 Fahrenheit and put coconut on paper shack and put shrimp in too and shake well and take one at the time and dip it in the hot oil till they are brown take paper towel on plate and lay them on top and then call me i will bring the beer!!
