Is it OK to freeze ham salad?
Made of ground ham (not store bought), Boiled eggs, Miracle whip onions and relish.
There is a lot left and it will go bad if I can't feeze it, but I need to know if it is safe.

Thank You Chuck. That is what I needed ! It is safe to freeze ham salad. It will prevent spoilage. However, you will have some deterioration in quality. Water will separate out of it, and the mayo might separate, looking curdled. The onions will also lose flavor. Ham salad isn't eaten for its looks anyway, so I don't think these are big drawbacks.
I suggest freezing it in smallish portions, and thawing only what you need, in the refrigerator for 24 hrs before using. Stirring in another spoonful of salad dressing after it thaws will cover up any imperfections. I've never been able to successfully freeze anything that had mayo or Miracle Whip in it. no I wouldnt the mannoise would be gross when you thaw it out slow. Of course it's fine! Remember in "The Empire Strikes Back," he was frozen in carbonite by Darth Vader and given to Boba Fett (who later gave him to Jabba the Hutt). So, yes, you can freeze Ham Salad. . . .
