About 50 people, and we are in no hurry for them to cook.

INGREDIENTS
4 pounds pork spareribs
1 cup brown sugar
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup rum
1/2 cup chile sauce
2 cloves garlic, crushed
1 teaspoon dry mustard
1 dash ground black pepper
In a bowl, mix together brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper. Coat ribs with sauce and marinate at room temperature for 1 hour, or refrigerate overnight.
Preheat grill for medium heat. Position grate four inches above heat source.
Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with marinade.
Maple Glazed Ribs

1 cup pure maple syrup
3 tablespoons frozen orange juice concentrate
3 tablespoons ketchup
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
1 teaspoon curry powder
1 clove garlic, minced
2 green onions, minced
1 tablespoon toasted sesame seeds
In a saucepan over medium heat, combine maple syrup, orange juice concentrate, ketchup, soy sauce, mustard and Worcestershire sauce. Stir in curry powder, garlic and green onions. Simmer for 15 minutes, stirring occasionally.
Cover ribs with sause.

The longer you cook them on LOW heat the more tender they will be.
Get them at least a day ahead so you can put a good rub on them and have them sit overnight. Grilled Ribs on metal gauss with lotsa bbq sauce~~~ If you have never tried pork country style backbones try some. Also baby back ribs. The only problem with baby backs is they are so expensive. That is why I suggested country style backbones. Plenty of meat on these even though the name suggest otherwise. We smoke ours and love them. Beef brisket is also good for a crowd is you are not in a hurry. I do not like the larger ribs because they tend to be tough and not have much meat on them.
