Help with a picky eater...?


I LOVE to cook, experiment and explore in the kitchen while my Husband is a strick meat and taters kind of guy, mostly because that's how he was raised. Occassionally I can get him to try new dishes, and he even has discovered he likes things that he never liked before. Through trial and error, we've discovered he doesn't like fish but does like shrimp...doesn't like Green veggies unless doused in cheese, hollindaise sause or ranch...with the exception of peas which he likes...the list goes on but I'll cut this semi short.

I'm tired of making the same things OVER AND OVER again... does anyone have some unique recipies that a good old fashioned southern boy will enjoy while still expanding his tastes and challenging me in the kitchen as well?

I'm not looking for restaurants - Actual recipes would be GREAT! I think anything tastes good if you make it Italian . . . so you could incorporate some "new" vegetables like zucchini or yellow squash slices in the tomato sauce and serve with ravioli or in a lasagna. I think I learned to like mushrooms because I had them in Italian food. And wrapping veggies in prosciutto before cooking is really good, too. Oh! And braciole - you could find a recipe easily online but it's basically meat like beef or pork pounded thin and then rolled around spinach, cheese, other veggies, etc (fillings can change) and then simmered in tomato sauce.

This kind of goes with any ethnic food . . . it's easy to start liking new cuisines and tastes and foods if you're trying new flavors. It might be fun for you to incorporate some of the things he likes into another culture's food . . . like if he likes steak, you could marinate a steak in Asian flavors and serve it with rice and vegetables. Or steak in tacos.

Or there are thousands of things you can do with shrimp: bbq shrimp kabobs, shrimp stiry fry (with the right sauce can make the veggies taste good for him) or even shrimp omlettes just to name a few.

Also, if he likes the green veggies doused in something, try making a less fattening sauce out of low-fat cream soups. Mostly, I guess if he likes the flavor of what veggies are served in, then he might learn to like the veggies. If he likes peas, try serving snow peas or snap peas - they're more flavorful than regular peas.

Have fun! i'm sure you've gone to Cracker Barrel before...and if not... you really should! they have GREAT southern dishes. one of my favorite is the hashbrown casserole. it's SOOO good! and it's "southern" so he'd probably love it. and if he likes greens w/ cheese you can make broccoli/rice/and cheese casserole. my mom makes it. it's delicious! well. good luck. -Chili casserole: Slice potatoes, by width or length, fry them a a bit on a pan, then put them on a baking pan (like lasagna) add chili on top, add cheese ontop of chili, you can make as many layers as you want...bake a few minutes... this is really really good!!! Korean - Marinated beef (sliced thin) and grilled. Once meat is cooked make "tacos" lettuce instead of tortillas and some rice. If you like it spicy add some hot chili paste. My picky eater loves this dish.

Also try Vietnamese- The food is light, and its mostly meat with rice or noodles. The sauces are mild and always served on the side.

Polish - Make your own Pirogi - Buy Pillsbury dough that you have to bake. Pick your favorite. Fill with chopped beef, onions, etc then seal and either bake or deep fry (depending on the size you make it.
