I need a good baked chicken recipe?!


Question:

I need a good baked chicken recipe?


It can incorporate veggies and different seasonings. I have a 4 yr old and a 7 yr old who are picky eaters.

Answers: Baked Chicken
4 chicken breasts, with bone and skin
1/4 cup butter, melted
1-2 teaspoon Season-All salt (I use McCormick's)
Preheat oven to 400°F.
Spray a shallow baking dish with non-stick cooking spray.
Rinse chicken breast under cool running water.
Pat chicken dry with paper towels.
Place chicken in dish.
Brush the melted butter over the chicken, using all the butter.
Sprinkle with seasoned salt.
Bake for 50-60 minutes or until cooked through.
~NOTE~Chicken takes only 50 minutes in my oven.
Don't over cook, as they might turn out tough.


Oven Baked Chicken and Vegetables
- 1 (3 to 4 pound) chicken, cut up and skin removed, if desired
- 3 potatoes, peeled and cut into large pieces
- 1 onion, coarsely chopped
- 2 stalks of celery, chopped into 1" chunks
- 2 cups baby or regular carrots
- 1 cup chicken broth
salt and pepper to taste

Preheat oven to 350o F.
Place all vegetables in prepared baking dish and season to taste. Place cut up chicken parts on top of vegetables and pour broth over the top. Sprinkle chicken with paprika.
Cover tightly with aluminum foil and bake 1? hours. Remove foil during the last 3 minutes of baking.
Serve hot.
Any of your favorite vegetables in any amount will work with this recipe.

from my recipe box I made chicken strips last night myself. I took three boneless skinless chicken breasts, sliced them length wise and seasoned them. I coated them with a mayonnaise and mustard mixture then coated them with smashed Ritz crackers and baked them at 375 for about 45 mins with mashed potatoes and choice of veggies. It's so simple and quite good. I don't know one child who doesn't like chicken strips:o) 1 1/4 cups Italian breadcrumbs
1/4 cup grated parmesan cheese
1/2 cup mayonaise
1 teaspoon garlic salt
1/2 teaspoon poultry seasoning
8 chicken breast halves

Combine breadcrumbs and parmesan. Mix together mayo, garlic salt, and poultry seasoning. Coat chicken with mayo mixture, then breadcrumb mixture. Bake at 425°F for 20 min. I like to put a layer of potatoes, carrots & whatever else we like, season it, then a layer of seasoned boneless skinless chicken breast, a few pats of margarine, and cover with plastic wrap (use a glass dish) & pop it in the microwave. Usually 10-15 minutes is fully cooked...times vary. So easy & delicious. Enjoy.
