Irish Bread Pudding
Makes 20 servings
Adapted from a recipe provided by Parting Glass chef John Burns
1 pound white bread, cubed
6 ounces melted butter
8 eggs
1 cup plus 2 tablespoons sugar
1/2 teaspoon salt
1 tablespoon vanilla extract
1 quart milk
1 cup heavy cream
2 1/4 teaspoons cinnamon
Pinch nutmeg
Heat oven to 350 degrees. Line a large, deep roasting pan with dish towels. Bring a kettle of water to a boil. Place rack in the center of oven. Drizzle the melted butter over bread cubes and place them in a buttered 9-by-13-inch baking pan. Scald the milk and cream. Mix together the eggs, sugar, salt and vanilla. Stir in the hot milk and cream. Pour this custard over the bread cubes. Sprinkle lightly with cinnamon and nutmeg (go easy on the nutmeg).
Place baking pan in roasting pan and set on oven rack. Pour boiling water into roasting pan until it comes at least halfway up the sides of the baking pan. Bake in a water bath until set, about 40 minutes. Irish Tea Cake [10 serv; ready in 55min]
1/2 cup butter, softened
1 cup white sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup confectioners' sugar for dusting
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.
In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Spread the batter evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack, then turn out onto a serving plate. Dust with confectioners' sugar right before serving.
