I soak it in milk for about a hour I slice a lot of onions enough to cover the pan bottom adding oil enough to keep from sticking Flour the liver place it on top of onions sprinkle with garlic powder cover pan cooking at med / med.low heat. when onions are done an start browning turn liver for 1 min. remove an eat again NEVER EVER OVER COOK. gee idk...I am not a flesh eater, but when I was on the dark side I use to first quickly boil it for 5-10 mins and then seer it in a skillet for about 15 mins. Add water while cooking so it won't dry out. Good luck...flesh eater. lol
Vegetarian power! Don't buy it at a supermarket. Get it FRESH. Really fresh. Cook it fast, really fast, and not until it is a cinder, either. The Japanese have a table top grill you can get at most Asian markets. Cut the live into two- or three-bite pieces and grill on high for a brief time. Ambrosia! Uh....don't! ;-> Saute chopped beef liver with onions and chicken cubes. Hard boil eggs. Mix sauted liver with hard boiled eggs. Now you have liver pate. My grandmother used to freeze it, then while it's still frozen cut into thin cutlets. As they defrost, dredge in seasoned flour and pan fry in hot shortening or oil. Serve hot with sauteed onions and brown gravy.

However, to cook a liver whole (or in a relatively large fillet) is a really beautiful thing. I haven't done it for a while, but if memory serves, you can cook it basically like a steak. I've done it on the stove top with a medium-hot pan, with some oil. You want to sear the outside, flipping once, while leaving the inside fairly rare. A juicy calf's liver is buttery and rich when prepared properly.
The typical accompaniment of onion is traditional because it can cover up of what is perceived as the unpleasant odor the liver emits when cooked. Another very lovely thing to eat with liver is thick cut bacon. Potatoes are also appropriate. My favorite part of eating a beautifully cooked calf's liver is creating that perfect bite- juicy slice of liver topped with a sauted onion curl and a smokey cut of bacon- all on the same fork moving toward the mouth... heaven.
